Our Table // Chocolate Chip Cookies

The ONLY chocolate chip recipe you will ever n e e d! These cookies are seriously the best, thick, chewy and buttery every time, this is one of the best recipes that yields perfect cookies all the time! And as an added bonus the recipe is super easy + straightforward!

Ready to go into the oven!

TA-DA! All done!

PRO TIP #1: For uniform cookie texture & consistency, ensure your butter is room temperature (not melted or frozen)

PRO TIP #2: To avoid flat cookies, chill dough -- a warm dough will tend to flatten and spread out. Simply put the prepared dough in the refrigerator for 30 minutes.

1 ½ cups all purpose flour
1 tsp baking soda
½ tsp salt
½ cup butter, softened (room temp)
½ cup firmly packed brown sugar
6 tbs granulated sugar
1 large egg
1 tsp vanilla extract
1 ½ cups chocolate chips

Preheat oven to 350°F. Line baking sheet with parchment paper. In medium bowl, sift flour, baking soda, and salt together. In mixer beat together butter, sugars on medium speed until smooth and mixed well. Add the egg and vanilla. Gradually add the flour mixture and mix until combined (be careful not to overmix!). Stir in chocolate chips. Chill dough. Using a tablespoon, drop cookie dough onto the prepared baking sheets. Bake cookies 9-11 minutes until golden brown.

How do you like to eat chocolate chip cookies? With milk? Ice cream? Peanut butter? Other…?
Or simply just as it is!?

Our Table // Peanut Butter Confetti Squares

Confetti Squares // Butterscotch Confetti Cake // Peanut Butter Confetti //
Regardless, of what you call these yummy bites, they are a all-time family favourite! These gooey squares are also my first-pick at any Farmer's Market and I am a very sad lady if there is no confetti squares in sight! Filled with flavour, the gooey peanut butter combined with the sweet butterscotch chips and marshmallows just melt in your mouth. I also LOVE that there are merely 4, yes only, 4 ingredients to make these quick treats and they are gluten-free!

Quick, easy, and only 4 ingredients!

Make sure to cool the butter // peanut butter // butterscotch mixture well or the marshmallows will melt when added!

We like to sprinkle some marshmallows on top -- it looks so pretty!

Run a knife under hot water to cut the squares neatly

Our Table // Smartie Cookies

Welcome to our table; where there is always good food, and even greater company! This is where I will share with you my family's favourite recipes and meals.

Today, I am sharing with you my all-time favourite, go-to cookie recipe.
It makes supersoft, thick, chewy and most importantly, DELICIOUS cookies. I typically always double my cookie recipes and today was no different -- fresh, home-baked treats don't last long around our home, plus they are perfect for packing in lunches.

The recipe calls for 1 1/2 cups of either M&M's, Smarties or chocolate chips but today I used half Smarties and half chocolate chips and it was p e r f e c t i o n!!

Dough all mixed! Do you see the chocolate chips and smarties?!

I used wax paper on the cookie sheets as my baking sheets are VERY old and do not cook my goodies properly or lift the cookies off easily when baked.
If I was using a newer/non-stick pan I would simply lightly spray with cooking oil
Happy kids helping me bake!

Smartie Cookies

1 cup margarine
1 cup brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla
1 tsp salt
1 tsp baking soda
2 1/4 cups flour
1 1/2 cups M&M's, Smarties or chocolate chips

Blend margarine and sugars. Beat in eggs and vanilla. Add the rest of the ingredients (except Smarties) and blend well. Stir in Smarties. Drop by teaspoon on ungreased baking sheet. If you have left over candies, you could decorate tops with remaining candies. Bake for 10 minutes at 375° F.
